How to make a simple Pizza from leftovers
Ingredients
Simple pizza dough:
200 gr flour
120 ml tepid water
1 packet yeast (7 gr)
Pinch of salt
2 TBSP olive oil
Mix dry ingredients in a bowl; add water and olive oil. Mix with spoon til combined. Remove from bowl and knead like bread until smooth (about 5 min). Put back in bowl, cover and allow to rise until doubled. Knock back and roll out to desired shape - in our case a rectangular cookie tray about 25 x 35 cm.
Topping:
100 gr grated parmesan (split in two)

sweet peppers chopped roughly (optional)
6 olives halved (optional)

Instructions
Roll out dough and place on pizza tray. Curl in edges so you do not lose ingredients. Brush edges and base with olive oil. Sprinkle 1/2 the grated parmesan on the base. Put in the oven (250 degrees) for about 5 min til starting to brown and crisp.
Remove from oven and spread out your ingredients ensuring the base is covered. Finish with the rest of the parmesan and whatever other cheese you may have, sprinkle a few dried herbs over the top and plonk it back in the oven for about twenty minutes. This is your chance to walk away for a while - have a glass of beer or wine - your choice.
Remove from oven and check the crust is nice and crisp and the cheese melted, if not, stick it back in again for a few minutes. When happy bang the tray flat on your cutting board to loosen the pizza and then slide it onto the board. Season to taste, cut into whatever size slices you like and enjoy. Remember that curry flavours seem to intensify with time so if the curry has been in the fridge for a few days it may seem a little spicier. Just in case, put some toilet paper in the fridge ready for the next morning.
