How to make Parsley Lumps

Parsley is one of our staple herbs but seems to come in a bit of a glut. You can dry it and add it to mixed dried herbs or alternatively you can mix it with olive oil and stick it in the freezer for when you need it during the winter

Pick your parsley and chop it up. Gather some ice cube trays together and whiz the parsley together with a splash of olive oil till it forms a smooth paste. When you are happy with the consistency spoon it into the ice cube trays and plonk them into the freezer overnight. The next day, bang them out, place in a ziplock or other suitable bag. When you want a lump say for seasoning a soup or stew, put in your pan and defrost over a low heat and away you go...piss easy.
