How to make Choc Chip Cookies
We love to have a cookie with our morning expresso and these are perfect for us and are based on our famous Choc chunk cookies. We can vary the size, the thickness and the size of the chocolate chunks, you can even add some roasted walnuts as well. They are quick and easy to make, half an hour from having the idea to them cooling on a rack and you can still make enough mess to piss off K without much effort, how cool is that?

Ingredients
110g of butter chopped up, let it soften for a while
1/2 a cup of packed brown sugar
1/4 cup white sugar
1 egg
1 Tsp vanilla
340g flour
1/2 Tsp baking soda
1/2 pinch salt
200g cooking chocolate hammered into chunks by a psychotic woman with a knife and a rubber hammer.

Instructions
Get K to smash up the chocolate with a knife and a big hammer basically so that you can blame all subsequent mess on her. Mix up the flour, soda and salt by hand in a bowl. Pre heat the oven to 180c (the prep won't take long). In the mixer, beat all the sugars and butter to a thick paste, then add the egg and beat till sort of fluffy, then add the vanilla and mix well. Now add the flour mix a bit at a time as it can get messy and beat till together but not too long, a minute at most then risk life and limb by adding the choc chunks. Normally I turn off the mixer, lob in the chunks, cover the mixer with a tea towel and run the f*ck away as it closely resembles the effects of a fragmentation grenade and will break a window. That said it's bloody funny but again, don't kick the arse out of it, give it 30 seconds, turn off the mixer, wipe the flour and choc lumps off your forehead, man the f*ck up and get your hand in there to give it a final mix.
This will pick up all the goo from the bottom of the bowl and clean your finger nails at the same time. When it's fashioned into a single blob attempt to either make a huge great single cookie or take my advice and fashion the dough into golf ball sized lumps by hand and plonk them onto a lightly oiled baking tray with space between for a bit of expansion, press down gently to get a flatish cookie. Cook at 180c for about 13-15 minutes until lightly brown. Cool on the tray for 15 mins then hack them off with a fish slice and place on a rack to cool completely....DON'T TOUCH AS THE CHOCOLATE NEEDS TO COOL COMPLETELY, if you do you will either be in a porn movie as K sucks your fingers or, depending on timing, be making a visit to ER. The next morning, if you have the willpower, make an espresso and enjoy a cookie, courtesy of two left wellies.
